Ingredients

3 cups cooked and chilled brown rice

2 Tbsp grapseed oil

1/2 cup onions, diced

4 cloves garlic, minced

1 1/2 cups small diced broccoli florets

1 cup diced zucchini

2 cups frozen vegetables (I like the carrot, peas, corn and bean mix)

4 large eggs

3 – 4 Tbsp tamari, to taste

Directions

Cook the brown rice and let it sit for 30 minutes to an hour to cool.

Heat the oil in a large non-stick wok  over medium-high heat. Add veg, onions, garlic and saute 3-5 minutes. Add rice and mix all together. Move rice and veggies over to one side of the pan, crack eggs into opposite side and scramble and cook through.

Stir rice, veg and egg together; adding tamari to taste.

Serve warm.
