2 eggs

1 tbsp olive oil

2 cups cornflake crumbs (more if needed)

2 large cod filets

sea salt

freshly ground pepper



1. Preheat oven to 450 F.  Line baking tray with parchment paper.

2. Lightly beat eggs with oil in a pyrex.

3. Place cornflake crumbs onto a dinner plate.

4. Cut fish into strips and lightly season with salt and pepper.  Soak the pieces of fish in the egg mixture then coat with cornflake crumbs, making sure to get all sides.

5. Place pieces of fish on the tray, in a single layer.

6. Bake uncovered for 12-15 minutes, until lightly browned.  If you want them crispier, bake for slightly longer, watching to make sure they do not burn.

7. Serve hot!
