Ingredients

Cauliflower Rice

  • 1 head of cauliflower
  • 1 tbsp avocado oil (can use alternate oil)
  • pinch of sea salt

Miso Dressing

  • 1″ fresh ginger
  • 2 small garlic cloves
  • 2 tbsp organic miso paste
  • 2 tbsp tahini
  • 1 tbsp raw honey
  • 1/4 cup rice vinegar
  • 1/4 cup water

Directions

Cauliflower Rice

  1. Preheat oven to 375 F. Line baking sheet with parchment paper.
  2. Wash cauliflower well and cut into florets.  Pulse florets in food processor until rice like (not too long though otherwise, it will become mushy).You may need to do two batches.
  3. Transfer rice to bowl and mix in oil and salt.
  4. Spread rice in thin layer on baking sheet.
  5. Bake for 20 minutes and then toss and bake for another 15-20 minutes (watching to make sure it does not burn).

Miso Dressing

  1. Add garlic and ginger to food processor to mince.
  2. Add all other ingredients and mix until well combined.
  3. Pour over cauliflower rice or use for a dip with vegetables.  This dressing is so delicious and versatile – it will be a constant in your house :)   Dressing inspired by Smitten Kitchen
