1 head cauliflower
1 egg, large
1 tsp herbs (basil/parsley/oregano)
dash of salt and pepper


1. Preheat oven to 375 degrees F and line round pizza baking sheet with parchment paper.

2. Cut cauliflower into florets and place in a food processor and process until “rice” texture. Some coarse chunks are fine.

3. Place on a prepared baking sheet and bake for 15 mins.

4. Remove cooked cauliflower from the oven and transfer to a bowl lined with a cheesecloth (or clean dish towel).  Then squeeze the liquid out of the cauliflower.  Make sure to squeeze several times and get as much as the water out, as possible (otherwise, the crust will be mushy).

5. Transfer cauliflower to a new bowl and add egg, seasoning, salt, black pepper and mix to combine.

6. Place cauliflower mixture onto parchment lined baking sheet and flatten into thin pizza crust.

7. Bake for 15 – 20 minutes and remove from the oven (watch to make sure it does not burn).

8. Top with your favourite toppings and bake again until cheese on top turns golden brown.
